Chipotle Chili

Ingredients
  

  • 2.5 lbs ground beef (or turkey)
  • 1 onion diced
  • 1 green bell pepper diced
  • ½ poblano pepper diced
  • 1 tablespoon garlic minced or paste
  • 1 tablespoon tomato paste
  • 29 oz Tomato Sauce can
  • ½ can chipotle peppers in adobo sauce you'll use about ½ of the 7oz can
  • 1 can chili beans
  • 1 can beef broth
  • 3 tablespoon chili powder
  • 2 tablespoon all purpose seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon beef bouillon powder optional
  • 2 tablespoon sugar
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 teaspoon cinnamon
  • salt to taste

Instructions
 

  • Blend up your chipotle peppers with adobo sauce. Use about ½ the 7oz can. Also add in few tablespoon of beef broth to thin it out just a bit while blending.
  • In a large pot, add some oil/butter and sauté 1 small diced onion, 1 small diced green bell pepper, poblano pepper, and a few cloves of minced garlic until softened. Remove and set aside.
  • Add in 2-3 lbs ground beef/turkey into a large pot or dutch oven and cook until done (browned)
  • Make a well in the center of your meat and add in tomato paste. Let tomato paste cook for 1-2 minutes
  • Add in tomato sauce, chipotle peppers (blended), and chili beans
  • Add in some beef broth until your chili reaches your desired consistency. I used about ½ the can of beef broth.
  • Add in your seasonings: Chili powder, all purpose seasoning, onion powder, garlic powder, smoked paprika, oregano, cumin, salt, sugar, beef bouillon (optional), and cinnamon (optional)
  • Give everything a good mix and simmer on low for 2+ hours if you have time. Stir every 15-20 minutes.
  • Serve and add your favorite toppings like cheese & sour cream
