Blend up your chipotle peppers with adobo sauce. Use about ½ the 7oz can. Also add in few tablespoon of beef broth to thin it out just a bit while blending.
In a large pot, add some oil/butter and sauté 1 small diced onion, 1 small diced green bell pepper, poblano pepper, and a few cloves of minced garlic until softened. Remove and set aside.
Add in 2-3 lbs ground beef/turkey into a large pot or dutch oven and cook until done (browned)
Make a well in the center of your meat and add in tomato paste. Let tomato paste cook for 1-2 minutes
Add in tomato sauce, chipotle peppers (blended), and chili beans
Add in some beef broth until your chili reaches your desired consistency. I used about ½ the can of beef broth.
Add in your seasonings: Chili powder, all purpose seasoning, onion powder, garlic powder, smoked paprika, oregano, cumin, salt, sugar, beef bouillon (optional), and cinnamon (optional)
Give everything a good mix and simmer on low for 2+ hours if you have time. Stir every 15-20 minutes.
Serve and add your favorite toppings like cheese & sour cream
