This Non-Traditional Shepherd’s Pie puts a fun twist on the classic comfort dish with bold flavors and simple, easy prep. Loaded with a savory meat filling, colorful veggies, and a creamy mashed potato topping, this modern version is hearty, family-friendly, and perfect for weeknight dinners.

Mashed Potatoes
- 2 lbs potatoes (5-6 medium sized russets will work)
- 1 ¼ cup half and half (milk is fine too)
- 1-2 tablespoon sour cream
- ⅓ cup butter
- ¼ cup parmesan cheese
- ¼ cup cheese of your choice (cheddar or smoked gouda work well)
- salt
- pepper
- 1-2 tablespoon garlic powder
Meat Filling
- 1.5-2 lbs ground beef (turkey or lamb work as well)
- ½ yellow onion diced
- ½ green bell pepper diced
- 1 tablespoon minced garlic
- 24 oz marinara/pasta sauce (should be about 1 jar)
- 1 bag frozen peas and carrots
- 1 tablespoon worcestershire sauce
- 1 tablespoon parsley
- 1-2 teaspoon thyme
- 1-2 teaspoon rosemary
- 1-2 tsp red pepper flakes
Mashed Potatoes
Peel and cut your potatoes into large cubes
Boil your potatoes in a large pot until fork tender (likely 15-20 minutes)
Once potatoes are done, drain and mash your potatoes
Add in your warm half and half or milk and mix
Add in your butter and mix
Add in your sour cream and mix
Add in your salt, pepper, garlic powder, and cheeses. Mix and taste to adjust seasoning
Meat Filling & Assembly
Preheat oven to 400 deg
Add 1-2 tablespoon oil to a skillet on medium heat
Cook your onion and bell pepper for 2-3 minutes or until softened
Add in garlic and cook another 2-3 minutes
Add in your ground beef and cook until full browned
Add in your peas and carrots and cook for a few minutes
Add in your jar of marinara/pasta sauce
Add in thyme, rosemary, parsley, red pepper flakes, Worcestershire, pepper and let simmer on low heat for 5-10 minutes
Add your meat filling to a baking dish
Top with your mashed potatoes and spread evenly across the top
Brush on some melted butter on top of the potatoes
Bake in the oven for 25 minutes (make sure to place a tray under the baking dish just in case it over flows during baking.
Broil on top for 2-3 minutes
Let rest and serve
