Easy Chicken Adobo

Ingredients
  

  • 4 chicken thighs (bone in preferred)
  • 4 chicken drumsticks
  • 6 cloves garlic minced
  • ½ onion diced
  • 1 tablespoon black peppercorns whole
  • 4 bay leaves
  • 3 tablespoon brown sugar (50g)
  • 1 cup rice vinegar
  • ½ cup water
  • ¾ cup soy sauce
  • black pepper
  • green onion garnish

Instructions
 

  • In a bowl, add your chicken, ½ your garlic(3 cloves minced), black pepper, peppercorns, sugar, water, bay leaves, soy sauce, vinegar and let marinade for 4 hours
  • Remove chicken from your from marinade 
  • Add oil to coat bottom of skillet and sear chicken on each side for 2-3 minutes per side.
  • Remove chicken and set aside
  • In your pot, add in onion and the rest of your minced garlic (3 cloves) to cook for 2 minutes
  • Pour in your remaining marinade and your water into your pot and bring to a boil. Reduce heat to low, add in your chicken, cover, and simmer for  45min flipping occasionally. Uncover for last 15 minutes 
  • If you want sauce to be thicker, remove chicken and heat sauce on high for 5-10 minutes until thickened 
  • Garnish with green onion and serve with rice
