
Easy Chicken Adobo
Ingredients
- 4 chicken thighs (bone in preferred)
- 4 chicken drumsticks
- 6 cloves garlic minced
- ½ onion diced
- 1 tablespoon black peppercorns whole
- 4 bay leaves
- 3 tablespoon brown sugar (50g)
- 1 cup rice vinegar
- ½ cup water
- ¾ cup soy sauce
- black pepper
- green onion garnish
Instructions
- In a bowl, add your chicken, ½ your garlic(3 cloves minced), black pepper, peppercorns, sugar, water, bay leaves, soy sauce, vinegar and let marinade for 4 hours
- Remove chicken from your from marinade
- Add oil to coat bottom of skillet and sear chicken on each side for 2-3 minutes per side.
- Remove chicken and set aside
- In your pot, add in onion and the rest of your minced garlic (3 cloves) to cook for 2 minutes
- Pour in your remaining marinade and your water into your pot and bring to a boil. Reduce heat to low, add in your chicken, cover, and simmer for 45min flipping occasionally. Uncover for last 15 minutes
- If you want sauce to be thicker, remove chicken and heat sauce on high for 5-10 minutes until thickened
- Garnish with green onion and serve with rice
