This cozy Lasagna Soup recipe combines all the classic flavors of traditional lasagna in a rich tomato broth, tender pasta, savory Italian sausage, and creamy ricotta served in one comforting bowl. Easy to make, family-friendly, and perfect for busy weeknights or meal prep!

- 8-10 Lasagna Noodles
- 2 lbs Ground Beef (or turkey)
- ½ onion (diced)
- ½ green bell pepper (diced)
- 5-6 cloves garlic (minced)
- 2-3 tablespoon tomato paste
- 4 cups beef broth
- 15 oz can crushed tomatoes
- 28 oz can tomato sauce (or can substitute 1 jar of your favorite pasta sauce for a great flavor)
- italian seasoning
- 1-2 tablespoon sugar
- crushed red pepper
- ¼ cup parmesan
- ¼ cup heavy cream (add more if you want it more creamy)
Ricotta Mixture
- 15 oz ricotta
- ¼ cup parm
- ½ cup mozzarella
- ½ cup cheddar
- garlic powder
- Italian seasoning
- fresh basil
Brown your ground beef
Add in your onion, garlic, and bell pepper while ground beef is browning
Add in red pepper flakes (to your heat preference)
Add in your herbs - oregano, parsley, Italian seasoning etc.
Add 2-3 tablespoon tomato paste and let it cook for 2 minutes
Add 4 cups beef broth
Add in tomato/pasta sauces
Add in sugar
Add in fresh basil
Bring to boil
Add in lasagna noodles (broken into 3rds)
Cook for 10 minutes
Add in ¼ cup heavy cream
Add in ¼ cup parmesan
Cook for 5 minutes additional or until lasanga noodle are cooked

Combine 15oz ricotta, ½ cup mozzarella, ¼ cup parm, ½ cup cheddar, garlic powder, fresh basil, Italian seasoning, salt, pepper, and mix thoroughly
