Crab Stuffed Chicken

Ingredients
- 3-5Chicken Breast
- 8 ozLump Crab
- 8 ozCream Cheese ((room temp))
- 5 ozBoursin garlic and herb Cheese ((room temp))
- ½ cupCheddar or Mozzarella cheese
- 1 packageRanch Seasoning
- Old Bay
- Salt
- Pepper
- Smoked Paprika
- Italian seasoning
- 2 tablespoonHoney
- 1 tablespoonGarlic Paste ((or minced garlic))
- ½Lemon (juice)
Instructions
- 1Preheat oven to 400°F (200°C)
- 2Cut a slit or pocket into the side of your chicken breast. Be sure not to cut all the way through
- 3In a mixing bowl, add cream cheese, boursin cheese, cheddar cheese, ranch seasoning, and italian seasoning and mix thoroughly
- 4Add in your lump crab and old bay seasoning and gently fold into mixture. Set aside
- 5Season each side of your chicken and inside the pocket with salt, pepper, garlic powder, onion powder, paprika
- 6Stuff your crab mixture into the pocket of each chicken breast
- 7Add 2 tbsp oil to a hot skillet and add your chicken (top side first) and cook for around 2 minutes.
- 8Flip chicken and add butter, garlic paste, honey and lemon juice to the skillet. Baste chicken in honey garlic butter mixture for another 2 minutes or so
- 9Now place skillet (make sure its oven safe) in a 400 deg oven for another 15-20 minutes until chicken is done
- 10Baste chicken with butter mixture once more and serve over mashed potatoes or rice
