Ingredients: 2 Deep Dish Pie Crust (You can get 4 pie crust if you'd like to use up your extra filling); 5 Sweet Potatoes (Make sure they are NOT over thick or they will take longer to cook); 1 Stick Melted Butter; 1 Cup White Sugar; 1 Cup Brown Sugar (+1-2 tablespoon additional brown sugar for pie crust); 1 tablespoon Sweetened Condensed Milk; 1 Can Evaporated Milk; 3 Eggs; ½ teaspoon Nutmeg; 2 tablespoon Cinnamon; 1 tablespoon Vanilla; ½ Orange (juiced); ½ Lemon (juiced); 1 Stick Melted Butter (Unsalted Butter); 1.5 Cup Sugar (Use 1 cup if you don't like it very sweet); 4 Eggs; 1 tablespoon Cornmeal; 1 tablespoon White Vinegar; ¼ Cup Milk

1Pre-heat oven to 400

2Wash and clean your potatoes thoroughly

3Pierce them all around with a fork and bake in the oven at 400 for 45 mins to an hr or until soft

4While potatoes bake, prepare the chess pie crust topping

5Mix all chess pie ingredients thoroughly and set aside for later

6Prepare your pie shells. Brush shells with some of your melted butter and add 1-2 tbsp of brown sugar on the bottoms to prevent shells from getting soggy. Bake in the oven for about 15 minutes on 350

7Once potatoes have fully cooled, peel the skin off of them and add to your mixing bowl

8Add your butter, evaporated milk, vanilla, and sweetened condensed milk(optional) and start mixing

9Add in your white and brown sugars and continue mixing

10Add in cinnamon and nutmeg

11Add in your 3 eggs

12Add in the juice from both 1/2 a lemon and 1/2 an orange

13(Optional) Use blender to get rid of any remaining strings if you don’t like them

14Fill pie crusts 2/3 of the way full with your sweet potato pie filling and bake for around 15-20 minutes in the oven on 350

15Remove your pies from the oven and add some of your chess pie filling on top

16Place back in oven and bake for around 1 hour or until tooth pick comes out clean

17Refrigerate (preferably overnight to allow it to set) and enjoy. I prefer heating this one up in the microwave for a bit before eating.
