
Crab Stuffed Chicken

Ingredients
- 3-5 Chicken Breast
- 8 oz Lump Crab
- 8 oz Cream Cheese (room temp)
- 5 oz Boursin garlic and herb Cheese (room temp)
- ½ cup Cheddar or Mozzarella cheese
- 1 package Ranch Seasoning
- Old Bay
- Salt
- Pepper
- Smoked Paprika
- Italian seasoning
- 2 tablespoon Honey
- 1 tablespoon Garlic Paste (or minced garlic)
- ½ Lemon (juice)
Instructions
- Preheat oven to 400°F (200°C)
- Cut a slit or pocket into the side of your chicken breast. Be sure not to cut all the way through
- In a mixing bowl, add cream cheese, boursin cheese, cheddar cheese, ranch seasoning, and italian seasoning and mix thoroughly
- Add in your lump crab and old bay seasoning and gently fold into mixture. Set aside
- Season each side of your chicken and inside the pocket with salt, pepper, garlic powder, onion powder, paprika
- Stuff your crab mixture into the pocket of each chicken breast
- Add 2 tablespoon oil to a hot skillet and add your chicken (top side first) and cook for around 2 minutes.
- Flip chicken and add butter, garlic paste, honey and lemon juice to the skillet. Baste chicken in honey garlic butter mixture for another 2 minutes or so
- Now place skillet (make sure its oven safe) in a 400 deg oven for another 15-20 minutes until chicken is done
- Baste chicken with butter mixture once more and serve over mashed potatoes or rice
